  1. Cut the pork neck into cubes.
  2. Fry on high heat until golden brown, add onion, carrot, celery and basil.
  3. Pour over the grated tomatoes, season with salt and pepper.
  4. Add the bay leaf, simmer for 2.5–3 hours, stirring occasionally.
  5. Boil the pasta until tender, mix with other ingredients and serve.
